Ashley Lembke is the Vice President of Food Safety & Quality Assurance for American Foods Group, LLC. In this capacity she oversees beef and pork slaughter, raw meat further processing and RTE facilities in the areas of regulatory affairs, food safety, quality assurance and animal welfare. Ashley received her B.S. in Animal Science from Colorado State University, and M.S. and Ph.D. in Meat Science from Texas Tech University. She served as co-chair for the Animal Welfare and Scientific Affairs Committees at the North American Meat Institute, is a BIFSCo Executive Committee member, and is actively involved in the US Roundtable for Sustainable Beef.
